Veggie nuggets and butternut squash mac and cheese, yum!
I’ve been feeling kind of guilty about the amount of veggies my little man has been getting lately. Don’t get me wrong he gets fed healthy meals but, he loves his bread and pasta. I wanted to find some healthier ways for him to get what his little body needs and enjoy eating it. I’m totally against frozen dinners and microwavable meals for him as of now, just my opinion. I love knowing what he eats is made in our kitchen and I know exactly what’s in it. So, I started looking for new recipes that were stuffed full of vegetables but disguised as something my boy would love.
Now, he’s never had chicken nuggets but I kept coming across veggie nuggets for toddlers. I decided it was something I wanted to try. I compared tons of recipes but didn’t ever find one that was quite simple enough for me. Then, I remembered my mom has made some zucchini fritters and she had given me the recipe. They were fried and had a good amount breading in them but it was so simple and something I could adjust to make a little healthier. I added carrots and sweet potatoes along with the zucchini but ideally you could add what ever fruit or veggie that you wanted. I also cut down the amount of breading in them so they were more veggies. Next time I make them I am going to cut it down even more and I’ll update my recipe here if it works better.
We loved the nuggets!
My husband said they turned out more like fritters than nuggets but I’m still going to call them nuggets(hehe)! My little guy loved them! I made them small so he could hold them and take a bite himself but you could easily make them any size you wanted. They are super easy and only have 3 main ingredients!
- 4 cups of shredded veggies
- 1 1/2 cup of baking mix(bisquick or any other brand will do)
- 2 eggs
- salt, pepper, garlic & onion powder to taste
Shred up 4 cups of veggies of your choice(I used zucchini, carrot and sweet potato). In a bowl stir together veggies, baking mix, and eggs. Season to taste. Heat skillet and spray with cooking spray so your nuggets don’t stick. Spoon out mix in desired amount, just like you would a pancake. Let brown, flip, and brown other side. And that’s it! Now, you get to enjoy!
Butternut squash Mac and Cheese
It really couldn’t get any easier! I also made butternut squash mac and cheese to go with it. That was super simple as well! I used this recipe from My Fussy Eater. Her sauce is super easy. It only includes butternut squash, cheese, milk and butter. I did change one little thing and did half noodles, half steamed coli flour. He at this dish up as well! Bonus: this one freezes great also!
I really can’t complain when my baby getting zucchini, carrots, sweet potato, butternut squash, and coli flour all in one meal and loves every bite! Give them and try and let me know how your little likes them veggie nuggets and butternut squash mac and cheese!
