Delicious Roasted Tomatoes
These roasted tomatoes have become one of my new favorite summer sides! I’m usually not a big fan of tomatoes unless they are on a sandwich or salad but these are the exception. You have to try these delicious things! My mom came across a similar recipe and made some roasted tomatoes with dinner one night. I just kind of stole the just of her recipe and made my own simple version. Mine are just as yummy but I don’t follow the recipe to a tee any more.
Here’s how I do it
All I do is slice some tomatoes up, you can do them thick or thin however you would like. First, I brush them with a little bit of olive oil. Then I sprinkle some shredded parmesan cheese, and top them with some oregano. You can make them as cheesy as you want, or just do a little to keep it nice and healthy! Just a little salt and pepper and in the oven they go! How much easier could that be?
And it’s a truly delicious way to get some extra veggies on your plate this summer! I just can’t get enough of them already. Even my husband that never eats cooked tomatoes like these. I can’t wait until I can use some tomatoes out of the garden to roast!
Just in case any of you want the actual recipe I followed in the beginning, here ya are! I do them a little different now and they are so easy you wont read this recipe but once! This recipe is for 4 servings(so it say, I could eat it all!)
4 tomatoes, halved horizontally
1/4 cut freshly grated Parmesan cheese
1 teaspoon chopped fresh oregano
1/4 teaspoon salt
Freshly ground pepper, to taste
4 teaspoons extra-virgin olive oil
Preheat oven to 450 degrees F.
Place tomatoes cut-side up on a baking sheet.
Top with Parmesan, oregano, salt and pepper.
Drizzle with oil and bake until the tomatoes are tender, about 15 minutes.
PS: This is a great way to pile on the veggies as part of the healthy habits were starting this year!
